Job Description

Oversee, direct, and helps to coordinate the planning, organizing, training, and leadership necessary to achieve stated objectives in sales, costs, employee retention, guest service and satisfaction, food quality and cleanliness.

Responsible for ensuring Pirata Group Culture is in place and is followed. Promote, work, and act in a manner consistent with the Mission of Pirata Group: To deliver extraordinary memorable experiences.

As a Floor Manager, the three key points of focus are Systems, Recruitment and training (in this same order)

Below is the breakdown of activities and responsibilities you will be accountable for.


Ensure that all restaurant policies, procedures, standards, specifications, guidelines, and training programs and followed and completed on a timely basis.

Monitor compliance with health and fire regulations regarding service and building maintenance.

  • Championing service, food, wine and drinks knowledge
  • Venue inspection prior to service (Bar, Toilets, Atmosphere, music) following managers check list when GM not on the venue
  • Responsible for grooming standards of the entire floor team.
  • Ensure legendary service is delivered at all times by gathering guest feedback through interaction with all the tables every service
  • Follow and implement standards for personnel performance and Guest experience.
  • Continually strive to develop staff in all areas of professional development.
  • Review work procedures and operational problems to determine ways to improve service, performance, or safety.
  • Report for equipment maintenance and repairs, and coordinate a variety of services, such as waste removal and pest control with the suppliers/contractors provided by the company.
  • Recruitment of Assistant Managers or below. Assistance for management recruitment will be given by the recruitment committee
  • Direct implementation for floor staff training programs and resolve floor staff issues Complete junior staff roster by every Thursday 5pm through 7shifts. Investigate and resolve complaints regarding service by addressing them on the spot and ensuring the guest ends leaving happy.
    • Responsible for ensuring all guests receive 5* treatment, touch tables and ensure the guest have a general great time collecting feedback and acting on the guest interest.
    • Responsible to contribute for an achievement of a minimum average of 4.5 rating through Revinate and Sevenrooms guest comments.
    • Responsible to contribute for an achievement of a minimum of 85% overall score in mystery dinner reports.
    • Ensure high quality service is delivered at all times by by monitoring and guiding the team during service· Achieve company objectives in Famp;B quality.· Investigate and resolve complaints regarding food quality by tasting the food and addressing with GM any issue with seasoning, product quality or cooking method.· Training Assistant Manager· Personally supervise new staff on-boarding and training program· Direct implementation for staff training programs, resolve staff issues, make hiring and termination decisions, and evaluate employee performance. · Reservation System Sevenrooms· Understanding and creating the server and management section plan · Effective complaint handling· Hospitality and guest experience· Opening and closing procedures· Understanding environmental air-con, music, main power switches and lighting controls· Card machines refund, reset, reports and troubleshooting· Purchasing procedures - Accepting deliveries, signing off invoices, checking outstanding goods· Employee evaluations appraisals and 1-on-1s· Financial Cash up procedures, banking, weekly attendance, ENT and DM report, safe counts, employee tips, understanding input and excel format.· Part time payment procedures demonstrated· Roster writing· Ensure all new junior floor staff starter on-boarding and training program is being adhered to

Requirements

  • Fluent in English communication. Cantonese and Mandarin is a plus.
  • Good Wine and bar Knowledge ( WSET level 2 or Equivalent a plus )

Experience working in a Italian Restaurant a plus but not required.

Must be eligible to work in Hong Kong
